Gran Torino Tortilla Soup

Gran Torino Tortilla Soup

1 quart (32 oz) chicken broth (organic free range is great for this)
1 large jar chunky salsa with corn and beans (I use a 26 oz jar)
1 rotisserie chicken –shredded
1 tsp minced garlic
1 Tab cilantro, chopped

Dump all ingredients in soup pot and cook 15-30 minutes.
Just before serving add:
½ cup Fat Free Half & Half with 2T cornstarch dissolved in it

Heat until thickened, about 5 minutes.

Ladle soup over broken tortilla chips or home-made tortilla strips, and garnish with your choice of goodies:

  • Avocado slices
  • Sour cream
  • Shredded cheese
  • White diced onion & cilantro
  • Additional tortilla strips
  • Lime wedges
